When life gives you lemons - make lemon squares!

All you sweet lovers are going to be happy this week. I, like many, am a massive chocaholic but sometimes I crave something different, something tangy and fresh to go with this gorgeous weather. I ensure that I have lemons in the fridge at all times for occasions such as these. I once came across this recipe found in Cakes and Cookies, a Flame Tree book.

Lemon Squares

Ingredients

125 grams of butter

2 eggs, lightly beaten

50 grams granulated sugar

200 grams caster sugar

Lemon rind and juice off 1 lemon

175 grams all purpose flour

2 additional tbsp Flour

1/4 tsp of salt

1/2 tsp of baking powder

sifted icing sugar, to decorate

Method

Go ahead and preheat the oven to 170 ° celsius, you will also need a 9 x 9 cm lined and greased tin. Rub together the flour and butter till it resembles breadcrumbs. Stir in the granulated sugar and mix.

Turn the mixture into the prepared tin and press down firmly. Bake in a preheated oven for 20 minutes or until golden.

While this is baking in the oven, mix the rest of the ingredients (except the icing sugar) in a food processor until smooth. Pour over the baked base that should smell fantastic.

Transfer this back to the oven for another 25 minutes or until the mixture is nearly set but still a little wobbly in the center  and that's it!!

Sprinkle the top with icing sugar and set aside for it to cool. Once ready, go ahead and cut well portioned squares and serve.

You will not be disappointed, I recommend keeping this recipe a secret from all guests ... you wouldn't want them knowing how easy these delicious squares actually were to make!
